lamb burger


Lamb Burger

ingredients:
1 lb. ground lamb
1 tablespoon of pine nuts, toasted
1 tablespoon of golden raisins
1 small bunch of mint, finely chopped
4 tablespoons of Greek feta cheese
2 tablespoons of extra virgin olive oil
salt to taste
pepper to taste
1 small onion, diced
1 ripe beefsteak tomato, sliced
2 or 3 leaves of romaine lettuce
1 loaf of semolina bread

directions:
1. Preheat the grill.
2. Saute the onion in a tablespoon of oil with a small pinch of salt until onions are translucent.
3. Mix the first eight ingredients together in a mixing bowl with your hands. Add the cooled onions to the mix and form into patties.
4. Grill for 3-4 minutes making sure not to overcook. (Lamb tends to get dry if cooked for too long.)
5. Assemble the sandwich with the lamb burger, a slice of tomato, and 1 leaf of lettuce. Serve to your very happy guests.
