Cara Cara orange olive oil cake with pistachio brittle

We turned out two beautiful cara cara orange olive oil cakes last night. On top of one of the cakes, we crumbled a pistachio brittle. We left the other plain for our morning coffee.

Look for this interesting breed of orange at the market this month—the cara cara orange has a pink flesh and tastes like an orange mixed with a pink grapefruit and the faint flavor of rose petals.
